A traditional Irish hearty one-pot dish consisting of layers of sausages, bacon, potatoes and onions gently simmered in a rounded and balanced Black Garlic broth.

Ingredients
1 litre water
4 tbsp Black Garlic Paste
8 pork sausages – cut into large chunks
8 slices back bacon rashers – chopped into large pieces
1 kg potatoes – peeled and sliced
4 large onions – peeled and sliced
Salt and freshly ground black pepper
4 tbsp chopped fresh parsley
Method
Bring the water to the boil in a large saucepan; add the Black Garlic paste, chopped sausages and bacon. Boil the meat for 5 minutes, remove the meat from the saucepan and set aside, reserve the cooking liquid.
Layer the meat, potatoes and onions in a hob proof casserole dish or a large saucepan fitted with a lid. Sprinkle salt, pepper and parsley between each layer. Add the reserved liquid to just cover the ingredients. Bring to the boil.
Cover the casserole dish or saucepan with foil and then a lid. Place over a low to medium heat and simmer gently for 1½ hours, until the potatoes are cooked but not mushy. The liquid should be reduced and almost absorbed.
