Black Garlic Irish Soda Bread

A quick and easy buttermilk soda bread with an extra flavour boost from Black Garlic.

Black Garlic Soda Bread

Prep: 15 mins | Cook: 30-40 approx. | Makes: 1 loaf | V

Ingredients

  • 450g plain flour plus extra for dusting
  • 1 level tsp bicarbonate of soda
  • 1 tsp salt
  • 400ml buttermilk
  • 2 tbsp Black Garlic Paste

Method

  • Preheat the oven to 230C/210Cfan/Gas8. 
  • Dust a baking sheet with flour.
  • Mix the flour, bicarbonate of soda and salt together in a large mixing bowl.
  • Whisk the buttermilk and Black Garlic Paste together in a jug.
  • Make a well in the centre of the flour and gradually add the buttermilk mixture to make a soft but not slack dough.
  • Turn the dough out onto a floured work surface and work into a round shape, 5 cm high. Place the dough onto the floured baking sheet. Cut a cross 1cm deep into the top of the dough.
  • Bake in the preheated oven for 30 minutes or until the loaf sounds hollow when tapped on the base.
 

To Serve: cut into slices or wedges and serve with BGK’s Black Garlic Brotchán Roy. 

Top Tip: making the dough quickly without much handling is the key to lighter soda bread. The cross on top of the loaf allows the bicarbonate of soda to work.
