A wholemeal loaf with the addition of sweet and fudgy nuggets of Black Garlic.

Ingredients
500g strong wholemeal bread flour, plus extra for dusting
2½ tsp fast-action dried yeast
1½ tsp salt
2 tbsp runny honey or vegan maple syrup
3 tbsp vegetable oil
270ml – 300ml warm water (approx.*)
15 cloves Black Garlic – cut in quarters
Olive oil for greasing the loaf tin
Method
Put the flour, yeast, salt, honey or maple syrup and oil into the bowl of a stand mixer fitted with a dough hook attachment.
Add 270ml of warm water and knead the dough for 10 minutes on a medium speed. *Add a little extra warm water if the mixture looks too dry to achieve a sticky dough that is easy to knead.
Once kneaded, transfer the dough to a lightly floured board or clean work surface. Knead the pieces of Black Garlic cloves into the dough by hand, ensuring the Black Garlic is evenly distributed throughout.
Grease a 2lb loaf tin with olive oil. Shape the dough to fit the loaf tin. Place the dough into the loaf tin and put in a warm place to rise for approx. 1 hour 15 minutes or until the dough is doubled in size.
Preheat the oven to 220C/200Cfan/Gas7.
When the dough is doubled in size place the loaf tin in the preheated oven and immediately turn the oven temperature down to 200C/180Cfan/Gas6.
Bake for 25 – 30 minutes until the loaf is risen and golden brown. To test if the loaf is cooked tap the bottom of the bread; it should sound hollow.
Top Tip:* the quantity of warm water to add is a guide because the absorbency of different flours can vary.
