An intense and spicy tomato soup with the flavours of a Bloody Mary cocktail; the combination of sweet roasted tomatoes and the richness of Black Garlic makes this soup a real winter warmer.

Ingredients
1 kg ripe tomatoes – halved
1 large onion – peeled and sliced
3 tbsp olive oil
3 sprigs fresh thyme
1 sprig fresh rosemary
Salt and freshly ground black pepper
700ml tomato juice
1 vegetable or vegan stock pot or stock cube
2 tbsp Worcestershire sauce or vegetarian Worcestershire sauce or vegan Worcestershire sauce
Put the tomatoes and onion in a large roasting tin. Drizzle with the oil, add the herbs and season with salt and freshly ground black pepper. Toss together and roast for 40 minutes. Set aside to cool.
Remove and discard the stalks from the roasted herbs. Liquidise the herbs and the contents of the roasting tin in a blender or with a hand blender then pass the tomato mix through a sieve or a vegetable mill into a large saucepan.
Add the rest of the ingredients with the exception of the vodka to the saucepan and simmer for 10 minutes.
Stir in the vodka.
To Serve: ladle the soup into bowls and serve with your choice of BGK’s Black Garlic Breads.
Top Tip: for Black Garlic Spicy ‘Virgin’ Mary Soup omit the vodka.
