Originally of Ukrainian origin every household has their own take on Borscht. Black Garlic Kitchen’s version adds an extra twist of flavour with the addition of a combination of black garlic cloves and paste. Beetroot gives this delicious soup its striking vibrant purple colour. Beets are naturally sweet with an earthy depth of flavour which mirrors the earthy flavour of Black Garlic.

Ingredients
80g butter
1 large red onion- peeled and roughly chopped
Pinch of salt
1kg beetroot – peeled and chopped into small pieces*
Put the butter in a large saucepan set over a medium heat. Add the onion with a pinch of salt, cook the onions gently for 10 minutes or until the onions are soft.
Add the beetroot, stir with the buttery onions and cook for a further 5 minutes. Add the crushed white garlic and black garlic cloves. Cook for 1 minute.
Add the fresh beef stock, beef stock pot and and Black Garlic Paste. Bring to the boil, add the bay leaves and pinch of sugar.
Reduce heat and simmer for 1 hour or until the beetroot is tender. Remove the bay leaves.
Transfer the soup to a blender and process in batches until completely smooth or purée with a hand-held blender.
Pass the borscht through a sieve into a large saucepan. Warm through.
Check the seasoning and season with salt and pepper to taste.
To Serve: divide the soup between warmed soup bowls. Garnish with a spoonful of soured cream and fresh dill leaves. Serve with crusty bread.
