Ingredients<\/span><\/p>
For the Black Garlic Tomato Sauce<\/span><\/p>
3 tbsp olive oil<\/span><\/li>
1 large onion \u2013 peeled and finely chopped<\/span><\/li>
1 large carrot \u2013 finely diced<\/span><\/li>
1 stick celery \u2013 finely chopped<\/span><\/li>
1 tbsp tomato pur\u00e9e<\/span><\/li>
8\u00a0cloves Black Garlic\u00a0<\/span>\u2013 finely sliced<\/span><\/li>
1 x 400g tin chopped tomatoes or 700g fresh tomatoes – peeled, deseeded and roughly chopped<\/span><\/li>
1 tbsp\u00a0Black Garlic Paste<\/span><\/span><\/li>
1 vegetable or vegan stock pot or stock cube<\/span><\/li>
2 tsp caster sugar<\/span><\/li>
1 tsp dried oregano<\/span><\/li>
\u00bd tsp Black Garlic Sea Salt<\/strong> or salt<\/li>
\u00bd tsp freshly ground black pepper<\/li>

Method<\/span><\/p>
Heat the oil in a large saucepan. Gently fry the onion, carrot and celery for 10 minutes until soft.<\/span><\/li>
Add the tomato pur\u00e9e and finely<\/span>\u00a0<\/span>sliced Black Garlic<\/span>. Cook for 1 minute.<\/span><\/li>
Add the remaining ingredients.<\/span><\/li>
Simmer very gently over a low heat for 45 minutes.<\/span><\/li>
Season to taste. Add a little more sugar if necessary to offset the acidity of the tomatoes.<\/span><\/li><\/ul>

Add tinned flaked tuna, sliced black olives and a handful of fresh basil.<\/span><\/li>
Fry chopped bacon or pancetta, add a handful of frozen peas. Add a little double cream at the last minute.<\/span><\/li>
Add a handful of halved cherry tomatoes and 3 chopped sun-dried tomatoes. Stir in 2 tablespoons of mascarpone cheese. Add a splash of\u00a0Black Garlic Infused Balsamic Vinegar<\/span>\u00a0at the end – v<\/span>egetarian.<\/i><\/li>
Dice and fry an aubergine in olive oil, add fresh oregano – v<\/span>egetarian and vegan .<\/i><\/li>
Chop a jarred roasted red pepper. Grate a courgette. Add to the sauce. Simmer for 5 minutes. Sprinkle over dry-fried pine nuts – v<\/span>egetarian and vegan.<\/i><\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t
