Ingredients<\/span><\/p>
450g sirloin \u2013 cut into thin strips \u2013 excess fat removed<\/li>
\u00bc tsp Black Garlic Sea Salt<\/b> or salt<\/li>
Freshly ground black pepper<\/li>
2 tbsp cornflour\u00a0<\/li>
1 egg white<\/li>
4 tbsp vegetable oil<\/li><\/ul><\/div>
\u00a0<\/div>
F<\/strong>or the Black Garlic Black Bean Sauce<\/b><\/div>
\u00a0<\/b><\/div>
1 large onion \u2013 peeled and thinly sliced.<\/li>
1 fresh red chilli \u2013 deseeded and finely sliced<\/li>
1 large red pepper \u2013 deseeded and cut into 2 cm pieces<\/li>
1 large green pepper \u2013 deseeded and cut into 2 cm pieces<\/li>
1 \u00bd tbsp salted fermented black beans \u2013 soaked in warm water for 5 minutes then drained\u00a0<\/li>
3 tbsp chicken stock<\/li>
1 tbsp Shaoxing rice wine or dry sherry<\/li>
1 tbsp Black Garlic Soy Sauce <\/b>or soy sauce<\/li>
10 cloves Black Garlic<\/b> \u2013 sliced<\/li>
\u00bd tbsp cornflour mixed with 2 tbsp cold water<\/li>
Salt and freshly ground black pepper<\/li><\/ul><\/div>

Method<\/span><\/p>
Rub the sliced beef with salt and pepper. Toss in the cornflour and coat in the egg white.<\/li>
Heat 2 tablespoons of the vegetable oil in a wok set over a very high heat, until hot. Stir-fry the beef for 1 minute. Remove the beef with a slotted spoon and set aside.\u00a0<\/li>
In the same wok add the remaining 2 tablespoons of vegetable oil, stir-fry the onion, peppers and chilli for 1 minute over a very high heat. Add the drained black beans and cook for a further 20 seconds.<\/li>
Stir in the chicken stock, Shaoxing wine and soy sauce over a high heat. Cook for a further 20 seconds.<\/li>
Return the beef to the wok and add the sliced Black Garlic cloves. Add the cornflour mix.\u00a0 Stir-fry for a further minute over a high heat.<\/li>
Taste for seasoning and add more salt and pepper according to preference.<\/li><\/ul>
