50g butter<\/li>\n
1 tbsp olive oil<\/li>\n
1.5kg onions \u2013 peeled, halved and thinly sliced<\/li>\n
1 tbsp sugar<\/li>\n
250ml dry white wine<\/li>\n
2 tbsp Black Garlic Paste<\/b><\/a><\/span><\/li>\n
8 cloves Black Garlic<\/b><\/a><\/span> \u2013 finely chopped<\/li>\n
1.5 litres fresh beef stock<\/li>\n
Salt and freshly ground black pepper<\/li>\n
2 tbsp brandy (optional)<\/li>\n<\/ul>\n<\/div>\n

1 small baguette \u2013 cut into 8 slices<\/span><\/li>\n
4 tbsp olive oil<\/li>\n
2 tbsp Dijon mustard (optional)<\/li>\n
150g Gruy\u00e8re or Comt\u00e9 cheese \u2013 grated<\/li>\n<\/ul>\n<\/div>\n<\/div>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

Method<\/span><\/p>
Melt the butter with the olive oil in a large heavy-based saucepan.<\/li>
Add the onions and sprinkle in the sugar. Cook the onions, uncovered, over a low heat, stirring every so often to until the onions are soft and caramel in colour (this can take up to 1 hour).<\/li>
Add the wine, bring to the boil and reduce the wine by half. Add the Black Garlic Paste and beef stock. Simmer over a medium heat for 20 minutes. Season with salt and freshly ground black pepper to taste. Add the brandy if using.<\/li>
While the soup is simmering prepare the cro\u00fbtes \u2013 preheat the oven to 240C\/220Cfan\/Gas 9. Brush both sides of the baguette slices with olive oil. Place them on a non-stick baking sheet. Put in the oven and cook for 7 minutes. Turn the toasts over, spread with mustard if using, sprinkle over the cheese and cook for a further 5 minutes until the cheese is bubbly and melted.<\/li><\/ul>

T<\/strong>o Serve:<\/b> ladle the soup into bowls. Place one cheese cro\u00fbte on top of each soup bowl. Serve any remaining cro\u00fbtes separately.<\/span><\/p>
T<\/strong>op Tip: <\/b>the success of this classic soup depends on the quality of the simple ingredients. BGK uses Pink Roscoff Onions for their gentle sweet flavour.
