Put the chicken drumsticks into a non-metallic dish.
Using a sharp knife make shallow slits in the top of the chicken drumsticks.
Season with salt and freshly ground black pepper.
Measure the marinade ingredients into a jug, mix well.
Pour the marinade over the chicken drumsticks and toss to coat.
Leave to marinate in the refrigerator for at least 1 hour.
To oven cook – preheat the oven to 220C/200Cfan/Gas7.
Lay the drumsticks in one layer on a roasting dish lined with non-stick parchment paper.
Roast the Black Garlic Sticky Chicken Drumsticks in the oven for 30 – 40 minutes until dark, sticky and cooked through.
After 20 minutes cooking time has passed, baste the drumsticks with the remaining marinade.
To cook on a barbecue – heat the barbecue to a moderate temperature. Brush the grill bars with vegetable oil. Place the chicken drumsticks directly on the grill bars, avoiding direct flame. Cook the drumsticks for 25-35 minutes, turning every 5 -10 minutes. Baste with a little of the remaining marinade. To check if the chicken drumsticks are cooked use a meat thermometer, which should read 75C minimum in the thickest part. If you do not have a meat thermometer, check for clear juices and no pink near the bone.
To Serve: serve warm or serve cold as part of a buffet lunch, barbecue or picnic. To serve as part of a barbecue let the drumsticks rest for a few minutes before serving to redistribute the juices.
