A simple rice dish packed with vegetables, meat and prawns, enhanced with the savoury taste of Black Garlic.

Ingredients
275g long grain rice
3 tbsp vegetable oil
2 red onions – peeled and finely chopped
1 red pepper – deseeded and sliced
200g button mushrooms – sliced
1½ tsp curry powder
200g frozen peas or pre-cooked green beans
4 tbsp Black Garlic Soy Sauce or soy sauce
2 tbsp sweet chilli sauce
1 tbsp Black Garlic Paste
1 x 200g tin chopped pork and ham – diced
200g small peeled cooked prawns*
Juice of 1 lime
Salt and freshly ground black pepper
Garnish:
1 tbsp chopped fresh coriander
6 cloves Black Garlic – finely sliced
Method
Cook the rice in a saucepan of boiling water according to the instructions on the pack. Drain the rice and leave in the colander. Cover the colander with a clean tea towel. Leave to stand for 5 minutes.
Spread the cooked rice onto a baking sheet. Put in the refrigerator for 1 hour.
Heat the oil in a wok or large non-stick frying pan. Add the onions, pepper and mushrooms. Stir-fry for 2 minutes or until the vegetables are soft. Add the curry powder. Stir.
Add the cooked rice, peas or green beans, soy sauce, sweet chilli sauce, Black Garlic Paste, diced tinned pork and ham to the wok or frying pan. Stir well to combine. Continue frying the rice mixture until piping hot.
Add the cooked prawns. Stir. Add the juice of 1 lime. Season to taste. Scatter with chopped coriander and sliced Black Garlic before serving.
Top Tip: to prevent the grains from breaking, always use a fork to stir the rice.
