Break the eggs into a large jug and whisk together.
Gradually beat in the flour then beat in the milk. Season with salt and freshly ground black pepper. Set aside.
Heat the oil in a large non-stick frying pan over a medium heat. Add the finely chopped bacon and onion, fry gently for 8 minutes. Leave to cool down.
When the bacon mixture is cool add to the batter along with the chopped Black Garlic. Mix well.
Brush a little vegetable oil into each hole in a non-stick mini pancake pan. Turn the heat to medium. Spoon one tablespoon of the batter mixture into each pancake hole, ensuring each pancake hole has equal quantities of the bacon filling.
Fry for 2 – 3 minutes on each side until golden brown.
Keep warm in the oven while you use the rest of the pancake mixture.
