Place the prawns, ginger, egg white, spring onions, Black Garlic Paste, soy sauce, cornflour, pepper and salt into a food processor. Pulse until a paste is formed.
Spread the prawn mixture very thickly on top of the slices of bread.
Put the sesame seeds onto a large plate. Place each slice of bread, prawn paste side down, onto the sesame seeds. Press the sesame seeds into the prawn paste.
Heat the vegetable oil in a wok or deep frying pan. When hot, fry the slices of bread one slice at a time, paste side down, for 2 minutes. Turn over and fry for a further minute until the bread is golden and the prawn paste is cooked.
Drain on kitchen paper.
Keep the sesame prawn toasts warm in an oven set to low temperature, until all the slices of bread have been fried. Place each prawn toast onto a chopping board and cut into 4 triangles.
To Serve: serve immediately with hoisin sauce for dipping.
Top Tip: to check if the oil is hot enough drop in a small piece of bread. If it sizzles when the bread hits the oil then the oil is up to temperature.
