An Egyptian creamy bean breakfast spiced with cumin with sweet notes from Black Garlic.

Ingredients
1 medium red onion – peeled and finely chopped
1 tbsp olive oil
1 clove white garlic – peeled and crushed
2 tsp ground cumin
1 tsp Black Garlic Sea Salt or table salt
1 tsp chilli flakes
2 large tomatoes – chopped
1 tbsp Black Garlic Paste
300g tin fava beans or broad beans – drained and rinsed
100ml water
50ml olive oil
Juice of ½ lemon
8 cloves Black Garlic – chopped
2 tbsp chopped fresh parsley
Salt and freshly ground black pepper
Method
Gently fry the onion on a low heat in one tablespoon of olive oil in a large saucepan for 5 minutes or until softened. Add the crushed white garlic, cumin, salt, chilli flakes, tomato and Black Garlic Paste. Add the drained beans and 100ml water. Cook over a low heat for 25 minutes.
Mash the bean and onion mixture with a potato masher then add the olive oil and lemon juice.
Stir through the chopped Black Garlic cloves and chopped fresh parsley.
Season to taste with salt and freshly ground black pepper.
Spoon the warm ful medames into a serving dish.
To Serve: serve with chopped fresh tomatoes, cucumber, hard boiled eggs and BGK’sBlack Garlic Mahlab Bread.
