Black Garlic Festive Brussel Sprout Slaw

A fantastic addition to a Boxing Day ‘cold cuts’ table – BGK’s alternative to traditional coleslaw using Brussel sprouts instead of cabbage to form the base of this crunchy slaw. Black Garlic Mayonnaise adds a creamy, earthy flavour to complement the salty cheese and bacon. So go on…spruce up your sprouts during the festive season with this quick and easy salad.

Black Garlic Festive Brussel Sprout Slaw

Prep: 10 mins + chilling | Cook: none | Serves: 6 as a side salad

Ingredients

  • 4 rashers smoked streaky bacon
  • 500g fresh Brussel sprouts – outer leaves removed, tough ends trimmed – sprouts shredded
  • 2 large carrots – peeled and grated
  • 1 red onion – peeled, halved and finely sliced into half moons*
  • 8 tbsp BGK’s Black Garlic Mayonnaise or commercially available Black Garlic Mayonnaise
  • ¼ tsp Black Garlic Sea Salt or table salt
  • ¼ tsp freshly ground black pepper
  • 1 tsp hot honey or honey
  • 1 tsp Dijon mustard
  • 1 tsp white wine vinegar
  • 1 eating apple – cored, chopped and acidulated with lemon juice
  • 100g Stilton cheese – crumbled
  • 6 cloves Black Garlic – chopped
  • Extra salt and freshly ground black pepper to taste
 

Garnish (optional)

  • Mixed seeds
  • Dried cranberries
  • Pomegranate seeds
  • Chopped pecan nuts 

Method

  • Heat a dry frying pan until hot and dry-fry the bacon rashers for 2 minutes on each side until crispy and cooked through. Snip the fried bacon into pieces using kitchen scissors. Set aside.
  • Add the prepared sprouts, carrots and red onion to a large mixing bowl.
  • In a separate bowl whisk together the Black Garlic Mayonnaise, salt, pepper, honey, mustard and vinegar.
  • Add the mayonnaise mixture to the bowl of grated vegetables. Stir through the apple, snipped bacon, cheese and chopped Black Garlic cloves. Mix until everything is well combined.
  • Cover and chill in the refrigerator for 30 minutes. NB The sprouts will soften but retain crunch.
  • When ready to serve, taste the slaw, season to your preference if necessary.
  • Pile the slaw into a serving bowl. Garnish with mixed seeds, dried cranberries, pomegranate seeds or chopped pecan nuts if using.
 

Top Tip:* for milder red onion with less of a ‘bite’, soak the sliced onion in cold water for 5-10 minutes. Drain well.
