Black Garlic Caribbean Chicken

Sweet and spicy Black Garlic Caribbean chicken prepared with chicken thighs marinated in a Black Garlic rum marinade. A taste of the Caribbean.

Black Garlic Caribbean Chicken

Prep: 20 mins + marinating overnight | Cook: 1 hour 30 mins | Serves: 4

Ingredients

 

Garnish

  • 1 red chilli – deseeded and sliced
  • 4 cloves Black Garlic – finely sliced
  • 4 spring onions – sliced

Method

  • First make BGK’s Black Garlic Caribbean Marinade and place in a large non-metallic bowl.
  • Make 2 slits into the skin side of each chicken thigh. Add the chicken thighs to the marinade and toss thoroughly until evenly coated. Cover the bowl with cling film. Marinate overnight in the refrigerator.
  • When ready to cook, remove the chicken from the marinade. Reserve the leftover marinade for later.
  • Heat the olive oil in a large frying pan. In batches, fry each side of the marinated chicken thighs until golden brown. Transfer the thighs into a large casserole dish suitable for a hob.
  • Using the same frying pan and oil, fry the onion and peppers over a low heat until softened. Add the chicken stock, Black Garlic Paste, ketchup, sugar and the leftover marinade. Bring to the boil then add to the casserole dish.
  • Reduce the heat and simmer the casserole very gently on the hob for 1 to 1½ hours until the chicken is cooked and tender.
  • Add the slices of Black Garlic cloves. Stir, taste and adjust the seasoning.

To Serve: transfer the chicken to a platter or individual plates. Spoon over the sauce and sprinkle over the garnishes. Long grain rice mixed with green peas is an ideal accompaniment.

Top Tip: marinating the chicken enhances the flavour, keeps the meat moist and tender, preventing the chicken from becoming too dry.
