A fantastic alternative to traditional coleslaw using Brussel sprouts instead of cabbage to form the base of this crunchy slaw. Black Garlic Mayonnaise adds a creamy, earthy flavour to complement the salty cheese and bacon: a real winter winner with an added bonus of being quick and easy to make!
Black Garlic Kitchen Garden showcase winter vegetable – Brussel Sprouts
1 eating apple – cored, chopped and acidulated with lemon juice
100g blue cheese – crumbled
6 cloves Black Garlic – chopped
Extra salt and freshly ground black pepper to taste
Garnish (optional)
Mixed seeds
Pomegranate seeds
Method
Heat a dry frying pan until hot and dry-fry the bacon rashers for 2 minutes on each side until crispy and cooked through. Snip the fried bacon into pieces using kitchen scissors. Set aside.
Add the prepared sprouts, carrots and red onion to a large mixing bowl.
In a separate bowl whisk together the Black Garlic Mayonnaise, salt, pepper, honey, mustard and vinegar.
Add the mayonnaise mixture to the bowl of grated vegetables.
Stir through the apple, snipped bacon, cheese and chopped Black Garlic cloves. Mix until everything is well combined.
Cover and chill in the refrigerator for 30 minutes. NB The sprouts will soften but retain crunch.
When ready to serve, taste the slaw, season to your preference if necessary.
Pile the slaw into a serving bowl. Garnish with mixed seeds and pomegranate seeds if using.
To Serve: serve as a side salad or in tacos, burgers, wraps, sandwiches or alongside cold cuts and baked potatoes. For a vegetarian version use vegetarian cheese alternative and replace the bacon with BGK’s Black Garlic Vegan ‘Bacon’ Piecesor BGK’s Black Garlic Tempeh Vegan ‘Bacon’.
Top Tip:* for milder red onion with less of a ‘bite’, soak the sliced onion in cold water for 5-10 minutes. Drain well.
