Black Garlic Breaded Prawns

A quick an easy appetiser – oven baked breaded jumbo king prawns in a light Black Garlic batter served with a Black Garlic & Ginger Mirin dip.

Ingredients

For the Black Garlic ginger & mirin dipping sauce
 
  • ½ tbsp Black Garlic Paste
  • 2 tbsp mirin
  • 2 tbsp rice wine vinegar
  • 1 tbsp Black Garlic Soy Sauce or soy sauce
  • 1 tbsp caster sugar
  • 2 tsp finely chopped fresh ginger
  • 1 tsp finely chopped fresh red chilli
  • 1 tsp crushed white garlic
  • 2 tsp sesame oil
  • 2 tbsp boiling water
 
For the breaded prawns
 
  • 500g frozen jumbo king prawns – thawed, deveined and drained on kitchen paper
  • Salt and freshly ground black pepper
  • Pinch of cayenne pepper.
 
For the Black Garlic batter 
 
 
For the breading
 
  • 125g golden breadcrumbs
 
  • Olive oil cooking spray

Method

  • Start by making the Black Garlic ginger & mirin dipping sauce – combine all the ingredients together. Mix well. Add extra sugar to taste. Transfer to a small bowl.
  • Dry the jumbo king prawns well with kitchen paper. Place in a bowl. Season with salt, freshly ground black pepper and a pinch of cayenne pepper. Stir to ensure that all the prawns are coated in the seasoning.
  • Next make the batter – put the egg, Black Garlic mayonnaise and flour into a jug. Whisk the ingredients together until well combined.
  • Put the batter onto a large plate.
  • Put the breadcrumbs onto another large plate. 
  • Coat each jumbo king prawn in batter then in breadcrumbs. 
  • Spread the bread crumbed jumbo king prawns in a single layer on a non-stick baking tray.
  • Place in the refrigerator for 30 minutes.
  • Preheat the oven to 200C/180Cfan/Gas6.
  • When ready to cook spray the jumbo king prawns lightly with olive oil.
  • Bake in the preheated oven for 8 minutes. After 4 minutes, turn the prawns over.
 

To Serve:  serve hot with a bowl of Black Garlic ginger & mirin dipping sauce.
