Black Garlic Beef in Black Bean Sauce

Quick and easy stir-fried beef with salty fermented black beans combined with sticky-sweet Black Garlic – full of umami flavour.

Ingredients

  • 450g sirloin – cut into thin strips – excess fat removed
  • ¼ tsp Black Garlic Sea Salt or salt
  • Freshly ground black pepper
  • 2 tbsp cornflour 
  • 1 egg white
  • 4 tbsp vegetable oil
 
For the Black Garlic Black Bean Sauce
 
  • 1 large onion – peeled and thinly sliced.
  • 1 fresh red chilli – deseeded and finely sliced
  • 1 large red pepper – deseeded and cut into 2 cm pieces
  • 1 large green pepper – deseeded and cut into 2 cm pieces
  • 1 ½ tbsp salted fermented black beans – soaked in warm water for 5 minutes then drained 
  • 3 tbsp chicken stock
  • 1 tbsp Shaoxing rice wine or dry sherry
  • 1 tbsp Black Garlic Soy Sauce or soy sauce
  • 10 cloves Black Garlic – sliced
  • ½ tbsp cornflour mixed with 2 tbsp cold water
  • Salt and freshly ground black pepper
 
Garnish
 
  • 2 spring onions – sliced
 

Method

  • Rub the sliced beef with salt and pepper. Toss in the cornflour and coat in the egg white.
  • Heat 2 tablespoons of the vegetable oil in a wok set over a very high heat, until hot. Stir-fry the beef for 1 minute. Remove the beef with a slotted spoon and set aside. 
  • In the same wok add the remaining 2 tablespoons of vegetable oil, stir-fry the onion, peppers and chilli for 1 minute over a very high heat. Add the drained black beans and cook for a further 20 seconds.
  • Stir in the chicken stock, Shaoxing wine and soy sauce over a high heat. Cook for a further 20 seconds.
  • Return the beef to the wok and add the sliced Black Garlic cloves. Add the cornflour mix.  Stir-fry for a further minute over a high heat.
  • Taste for seasoning and add more salt and pepper according to preference.
 

To Serve: transfer to a serving plate. Garnish with sliced spring onions. BGK’s Black Garlic Oriental Mushrooms make a great side dish.
