Ingredients
2 bunches British asparagus
8 slices Proscuitto de Parma
1 tbsp Black Garlic Paste
2 tbsp extra virgin olive oil
Garlic pepper or freshly ground black pepper
Garnish
Balsamic glaze – optional
Method
Preheat the oven to 200C/180Cfan/Gas6.
Snap any woody tips off the asparagus where they naturally break apart.
Lay each slice of prosciutto on a clean board stretching away from you. Smear a little Black Garlic Paste on each slice.
Place 3 asparagus spears at one end of the prosciutto. Roll them tightly in the proscuitto.
Arrange seam side down on a non-stick baking sheet.
Repeat with the remaining asparagus and proscuitto.
Brush each bundle all over with extra virgin olive oil. Sprinkle over plenty of black pepper.
Bake for 10 -12 minutes until the asparagus spears are tender.
To Serve: place on a serving dish and drizzle with a little balsamic glaze if using. Serve as a side dish with fish or meat.
