Creamy mashed potatoes with silky rich mascarpone and the unique earthy taste of Black Garlic.

Ingredients
Salt for the potato water
1.5 kg floury potato e.g. King Edward or Maris Piper – peeled and cut into chunks
50g butter
125ml hot milk
4 tbsp mascarpone
Salt and freshly ground pepper
6 cloves Black Garlic – chopped
½ tsp Black Garlic Paste
6 spring onions – sliced
2 tbsp finely chopped chives
Garnish
½ tbsp finely chopped chives
2 clovesBlack Garlic – finely sliced
Method
Bring a large saucepan of salted water to the boil. Add the potatoes and boil for 20 minutes until tender. Drain the potatoes. Cover with a clean tea towel to absorb the steam.
Put the drained potatoes back into the saucepan and place on a very low heat. Add the butter and hot milk to the warm potatoes.
Mash the potatoes using a potato masher or put through a potato ricer. Add the mascarpone to the potatoes and beat together with a wooden spoon until thick and creamy.
Season to taste with salt and freshly ground black pepper.
Gently stir in the choppedBlack Garlic cloves, Black Garlic Paste, spring onions and chives.
To Serve: sprinkle over the garnish of chives and finely chopped Black Garlic cloves.
Top Tip: adding hot milk to the mashed potatoes will help to ensure a smoother finish. For an extra rich ‘cheesy’ mashed potato, stir 150g grated strong Cheddar cheese or vegetarian alternative into the mix.
