A traditional British sauce used as an accompaniment to Christmas lunch or dinner. Made with milk and breadcrumbs, spiced with dried cloves and enhanced with a hint of Black Garlic.
BGK’s Festive Fun Facts – bread sauce can be traced back to medieval times when cooks used bread as a thickening agent for sauces, stews and soups that were once served at Christmas feasts.

Ingredients
1 large whole onion – peeled
6 dried spice cloves
1 pint milk
1 bay leaf
8 black peppercorns
120g white breadcrumbs
½ tbsp Black Garlic Paste
50g butter
Salt and freshly ground black pepper
Method
Stud the onion with the dried spice cloves.
Put the milk, bay leaf and peppercorns into a saucepan. Add the whole studded onion. Bring to the boil then remove from the heat. Leave to infuse for 15 minutes.
Remove the onion from the milk mixture and pass the liquid through a sieve into a separate saucepan.
Add the breadcrumbs and Black Garlic Paste to the sieved milk. Simmer over a low heat until the breadcrumbs are absorbed, stirring occasionally.
Stir in the butter.
Season to taste with salt and freshly ground black pepper.
Top Tip: BGK’s Black Garlic Bread Saucecan be made ahead of time. If making a day or two before, loosen the sauce with a little milk when re-heating. Adding a couple of tablespoons of double cream before serving is a nice addition.
