A Black Garlic filled bread stuffing to accompany a traditional Christmas roast dinner.
BGK’s Festive Fun Facts – the word ‘stuffing’ comes from the old French word ‘estoffe’, meaning ‘to fill up’, which was later anglicised to ‘stuff’. Stuffing’s origins can be traced back to ancient Rome when meat, vegetables and various seasonings were used to stuff meat dishes. Stuffing has become a staple accompaniment to holiday feasts.

Ingredients
Butter for greasing
400g onion – peeled and chopped
200g breadcrumbs
8 cloves Black Garlic – sliced
6 tsp dried sage
Zest of a lemon
100g melted butter, plus extra for greasing
Salt and freshly ground black pepper
Method
Preheat the oven to 200C/180Cfan/Gas6.
Grease a small roasting dish or gratin dish.
Put the chopped onions into a saucepan. Cover with water. Simmer for 15 minutes.
Put the breadcrumbs, sliced Black Garlic cloves, dried sage and zest of a lemon in a large bowl.
Drain the cooked onions and add to the breadcrumb mixture.
Melt 100g butter. Add to the onion/breadcrumb mix. Stir to combine all the ingredients. Season to taste with salt and freshly ground black pepper.
Put the breadcrumb mixture into the greased roasting or gratin dish.
Bake in the oven for 30 – 35 minutes until golden brown.
