Nduja is a spicy, spreadable pork sausage from the Calabria region of Italy. BGK’s gnocchi is a rich dish with a creamy and oh so moreish nduja sauce, perfectly punctuated with nuggets of sweet Black Garlic. Super quick to make!

Ingredients
500g gnocchi
200g frozen petit pois
50g butter
2 cloves white garlic – crushed
50g nduja
1 tbsp Black Garlic Paste
200ml double cream
Juice of ½ lemon
1 tsp sugar
50g grated Parmesan cheese
2 tbsp chopped fresh parsley
6 cloves Black Garlic – sliced
Salt and freshly ground black pepper
Garnish
Extra Parmesan cheese
½ tbsp chopped fresh parsley
A grinding of pepper
2 cloves Black Garlic – sliced
Method
Cook the gnocchi according to instructions on the packet, along with the peas – drain and reserve.
Meanwhile, melt the butter in a deep frying pan set over a medium heat. Add the crushed white garlic.
Add the nduja and whisk into the butter until melded together. Whisk in the Black Garlic Paste.
Add the cream and whisk to combine, taking care not to boil the mixture.
Add the lemon juice and sugar followed by the Parmesan cheese. Whisk until combined.
Cook gently for 2 minutes until warm.
Add the parsley and chopped Black Garlic cloves. Season with salt and freshly ground black pepper according to taste.
Transfer the drained gnocchi and peas directly into the frying pan. Heat through.
To Serve: transfer to a serving dish. Garnish with a sprinkling of Parmesan cheese, chopped fresh parsley and a grinding of black pepper. Scatter over the slices of Black Garlic.
