Black Garlic Brummie Bacon Cakes

Brummie cakes originate from the city of Birmingham. BGK has loaded these scone-like cakes with Black Garlic flavour.

Method

  • Fry the bacon until crisp. Set aside to cool. When cool cut the bacon into small pieces.
  • Preheat the oven to 180C/160Cfan/Gas4. Line a baking sheet with parchment paper. 
  • Sift the flour and salt into a large bowl. Add the butter then rub into the flour until the mixture resembles breadcrumbs.
  • Add the cooked bacon pieces, chopped Black Garlic cloves and 25g grated Cheddar cheese. Stir until the ingredients are well distributed.
  • Mix the milk, ketchup and Worcestershire sauce in a jug. Pour into the bacon mixture and mix using a blunt knife until a dough forms. 
  • Lightly flour the work surface then turn the dough onto it. Shape the dough into a circle 18cm in diameter. Brush the top with milk, scatter with the remaining Cheddar cheese and cut into 8 triangles using a large (non-serrated) knife.
  • Arrange the triangles on the baking sheet. Bake for 20 – 30 minutes or until risen and golden brown.
 

To Serve: serve warm with BGK’s Black Garlic Herb Butter.

Top Tip: use kitchen scissors to cut the bacon into small pieces. The dough needs handling as little as possible.  Work the dough until it only just comes together. Dusting the knife with a little flour will help prevent the knife from sticking to the dough when cutting into triangles.
