Black Garlic Tequila Prawns

Pan fried prawns, tequila, lime, fresh coriander and Black Garlic with classic Mexican flavours.

Black Garlic Tequila Prawns

Ingredients

For the Mexican Seasoning
 
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp paprika
  • 1 tsp Black Garlic Sea Salt or table salt 
  • ½ tsp dried oregano
  • 1½ tsp ground cumin
  • ½ tsp ground black pepper
 

For the Prawns

 
Garnish
 
  • 2 tbsp chopped fresh coriander
  • Juice of 1 lime 

Method

  • Start by making the Mexican seasoning – combine all the ingredients for the Mexican seasoning in a bowl.
  • In a separate bowl add 2 teaspoons of Mexican seasoning with the oil, tequila and Black Garlic Paste. Mix well. Add the raw prawns to the mix and coat well.
  • Heat a large frying pan or wok. Add the prawn mixture. Stir-fry until the prawns are cooked through. 
  • Just before serving add the finely sliced Black Garlic to the frying pan or wok.
 

To Serve: serve on a platter. Sprinkle over chopped coriander and squeeze over the juice of a lime.

Top Tip: this is delicious as a tapa. Any remaining Mexican seasoning can be stored in a screw-topped jar for later use. The addition of a squeeze of lime juice to the Black Garlic Tequila Prawns at the last minute enhances the flavour of the dish.
